The cornerstone of superb pizza dough lies in the use of superior flour. 00 flour, which is an ultrafine Italian variety with a moderate protein percentage (approximately 12%), is what we advocate. This ensures an ideal mix of elasticity and softness. Should 00 flour be unavailable, bread flour can serve as an alternative, albeit with a slightly altered consistency.
Importance of Water Temperature and Dough Hydration
The water's temperature is pivotal in dictating the dough's fermentation duration and maturation. Opt for cold water at about 45°F (7°C) if you're aiming for gradual fermentation to enhance flavor. Conversely, use warm water at around 85°F (29°C) for a speedier fermentation process. Aim for a dough hydration level, that is, the water-to-flour ratio, in the range of 60-70% to best suit typical home ovens.
Less Yeast, Longer Fermentation
A crucial element in creating rich-flavored dough is to use minimal yeast and allocate ample time for fermentation. For doughs that ferment over a 24-48 hour period, we utilize merely 0.2% fresh yeast in proportion to the flour. This extended fermentation fosters a complexity of flavor and yields a dough that's more digestible.
The Functional Role of Salt
Salt's role transcends mere flavoring; it fortifies the gluten network and moderates fermentation. We advise a fine sea salt inclusion of 2.5-3% relative to the flour mass. Introduce it once your flour and water begin to amalgamate to circumvent direct contact with the yeast.
Fermentation: A Delicate Craft
Post-mixing, allow the dough to undergo an initial bulk fermentation at ambient temperature for a couple of hours before segregating it into individual portions. These portions should then be stored in lidded containers and placed in the refrigerator for a period ranging from 24 to 72 hours. During this cold fermentation phase, enzymatic action converts starches to sugars, which not only enhances flavor but also contributes to the crust's appealing browning.
Gentle Dough Handling
When ready to bake, remove the dough from the frigid confines of your refrigerator 1-2 hours in advance to bring it to temperature. When shaping, handle the dough delicately to maintain the gas bubbles developed during fermentation. This implies pressing and stretching the dough with your fingertips rather than resorting to a rolling pin, which would deflate those desired air cavities.
Applying Adequate Heat
Though our restaurant's wood-fired ovens blaze at about 850°F (454°C), household ovens typically max out near 550°F (288°C). To make up for this, it’s best to bake on a pizza stone or steel that's been heated for a minimum of one hour, simulating the intense bottom heat crucial for a crunchy shell encasing a porous interior.
